It originates from the Middle East and grows wild in temperate and hot climates in Southern Europe, North Africa, the Middle East and Western Asia. In Turkey, it grows throughout Anatolia, especially in Southern and Eastern Anatolia.
As a spice, it is mostly known and used in the Middle East. In addition to aroma and flavor, it is used for its personality and color. It is found in many local and ethnic dishes, ground or in the form of aqueous extract (sumac sour). In Turkey, it is found especially in salads and piyaz, meat and vegetable dishes, and various local foods.
